Simply Good Omelettes

Ingredients
3 Big Yolkers eggs, beaten
1tsp butter
1tsp sunflower oil
Filling
The choice is yours – simple fresh herbs and or grated cheese, ham, cooked mushrooms or smoked salmon and so much more…
Method
Heat the butter and oil in a non-stick frying pan.
Season the Big Yolkers eggs with salt and pepper and whisk. If you want a super fluffy omelette separate the yolks and whisk the whites first, then fold in the yolks.
Pour the mixture into the pan, tilting the pan from side to side to ensure the Big Yolkers eggs cover the pan and cook for 20 seconds before using a wooden spoon to draw the cooking egg mixture to one side in the pan, allowing the runny egg mix to refill the pan. Repeat this a couple of times until all the egg is just cooked.
Add your filling and turn half of the omelette over it leave to warm through, then serve immediately.
